RECIPE: Two-Minute Steak and Endive Salad
This salad is easy, flavorful, and easy to make with some leftover steak. It is an easy one to pack for work and travels well. The endive is a unique flavor and change up from traditional mixed lettuce. It also has a nice crunch that other lettuces do not.

Two-Minute Steak and Endive Salad

- 1 large or 2 small endive bulbs
- ½ cup parsley, chopped fine
- 2 tbsp fresh tarragon, minced
- 4 to 6 oz steak
- 1 hard-boiled egg, sliced
- 1 tsp dijon mustard
- 1 tbsp red wine vinegar
- 2tbsp olive oil
Coarsely chop the endive(s) and place in a medium sized bowl. Add the parsley and tarragon. Top with sliced steak and hard-boiled egg. Mix all dressing ingredients together and dress right before serving.
